Traditional spray drying processes require high-temperature dehydration, which completely destroys more than 17 aromatic compounds in coffee, resulting in the loss of core active nutrients such as chlorogenic acid and caffeine. Our freeze-drying equipment uses low-temperature vacuum sublimation drying technology, operating at low temperatures throughout the process. It can stably control the processing temperature below 0℃. First, through precise temperature-controlled pre-freezing technology, the coffee concentrate is slowly pre-frozen at a rate of 1~2℃/min, forming uniform and delicate micro-ice crystals. This prevents the ice crystals from damaging the microstructure of the coffee concentrate, eliminating problems such as clumping and uneven appearance.

Sublimation Drying Stage
During the core sublimation drying stage, the equipment precisely controls the vacuum level to maintain between 15 and 25 Pa, and the shelf heating rate is stabilized at 0.5℃/min. This allows the ice crystals in the coffee concentrate to directly sublimate into water vapor under vacuum, skipping the liquid-to-gas conversion process and completely avoiding flavor and nutrient loss caused by high-temperature processing. The entire process retains over 95% of the coffee's original flavor compounds and active nutrients, maximizing the restoration of the coffee beans' natural sweet and sour texture and rich flavor. After brewing, it quickly reconstitutes, leaves no residue, and has a rich aroma, closely resembling the quality of freshly ground coffee, perfectly meeting current consumer demand for high-quality instant coffee.
